In 1900 the Illinois beef trade ran largely through Chicago, where the Union Stock Yards, opened on the South Side in 1865, received cattle, hogs and sheep by rail from the Plains and Midwest. Packing firms including Armour and Swift built plants nearby, and the district around them drew thousands of immigrant workers from Ireland, Germany, and southern and eastern Europe. Chicago passed 1.6 million residents by 1900, and its packers shipped dressed beef across the country in refrigerated railcars. The yards' filth and hard labor would soon draw national attention through Upton Sinclair's 1906 novel *The Jungle*.
