Chicago's Union Stock Yards in 1900 occupied a large tract on the South Side, where livestock arrived by rail and left as dressed meat bound for markets across the country. The yards had opened in 1865 under a consortium of railroads, and packing firms such as Armour and Company and Swift built plants nearby, making Chicago the center of American meatpacking. Thousands of workers, many of them immigrants from Eastern and Southern Europe, lived in crowded neighborhoods close by and labored long hours on the killing floors. Chicagoans took pride in a trade that fed the nation, though the odors and working conditions would later draw sharp national criticism.
