Among images of Native life, this one turns to food preparation, showing an Apache camp built around mescal, the agave whose roasted hearts were a staple food cooked in earth ovens. Edward S. Curtis made the photograph around 1903, while he was building his large documentary survey of Native peoples, later published as *The North American Indian*. Curtis often arranged his subjects and settings, so the scene reflects his choices as well as everyday routines. It is worth looking closely at the people and their work as a record of a practice that was common among Apache communities at the time.
