Few subjects on this board are as unusual as a president on horseback sculpted in butter. The figure of Theodore Roosevelt, who was in the White House from 1901 to 1909, was carved from dairy butter and displayed in St. Louis around 1905, a city that had hosted the Louisiana Purchase Exposition the year before. Butter sculpture was a popular attraction at expositions and state fairs, where dairy interests showed off their product through elaborate modeled figures that could be kept cool for the crowds. The stereo format, with its paired views, was then a common way to record such displays for home viewers. The caption details here come from an unverified card, so the exact sculptor and setting are best checked against other records.
