Chicago's Union Stock Yards, on the city's South Side, was the center of the American livestock trade in 1899. The yards had opened in 1865, and the railroads that converged there brought cattle, hogs, and sheep from the Plains and the Midwest to be sold, held in pens, and slaughtered nearby. Packing firms such as Armour and Swift had built large plants alongside the pens, and the district around them, later called Packingtown, drew thousands of immigrant workers, many from Eastern and Southern Europe. Chicago residents of the day knew the place for its noise, its smell, and its scale, and they measured the city's growth partly by the number of animals that passed through its gates. Within a few years, reformers and novelists would bring its working conditions to national attention.
