Chicago's Union Stock Yards, on the city's South Side, were the center of American meatpacking in 1907. Opened in 1865 and run by a consortium of railroads, the yards handled cattle, hogs, and sheep arriving by rail from the Plains and Midwest, and the packing houses nearby turned them into beef and pork for markets across the country. The Chicago, Burlington & Quincy and other lines laid their tracks through the pens, making the yards one of the busiest rail junctions in the nation. The stockyards drew thousands of workers, many of them immigrants from Eastern and Southern Europe, and by then Upton Sinclair's 1906 novel *The Jungle* had made the packing district a national symbol of unsanitary working conditions.
