Bananas are unloaded here on their way to an early ripening room, a step that came between the dock and the grocer's shelf. Fruit was shipped green, so importers held it in heated rooms where ethylene gas and controlled warmth turned the skins yellow before distribution. The picture comes from a 1948 issue of *Unifruitco*, the company magazine of the United Fruit Company, one of the largest importers of bananas from Central America and the Caribbean. It shows how much handling and timing went into getting a perishable tropical crop to American tables.
