A beef cutting machine at Armour's plant in the Union Stock Yards is the focus of this view, made on Chicago's South Side around 1909. The Stock Yards had grown since the 1860s into one of the largest meatpacking centers in the world, and Armour & Company was among its biggest operations. Public scrutiny of the packing houses intensified after Upton Sinclair's 1906 novel *The Jungle*, which helped spur the federal meat inspection law passed that same year.
