Swift & Company's packing house on Chicago's South Side is the setting here, with beef being dressed on the slaughtering floor. The Stock Yards and the packing plants around them made Chicago the center of the American meat trade in the late 1800s and early 1900s, processing livestock on a scale few other industries matched. This stereograph was issued by the H.C. White Co., a firm that sold paired photographs to be viewed through a stereoscope for a three-dimensional effect. The same year it appeared, Upton Sinclair's novel *The Jungle* drew public attention to conditions in these plants, and Congress passed the Meat Inspection Act.
