Workers filling casings in the sausage department of Armour's packing house are the focus of this stereograph, which shows one of the best-known meatpacking operations of its day. Armour & Company ran its large Chicago plant near the Union Stock Yards on the city's South Side, where meat was processed on a scale that drew national attention. The catalog headings also name child labor, a reminder that young workers were common in such plants in the 1890s, and that conditions there were later exposed in Upton Sinclair's 1906 novel *The Jungle*. Published in New York by Strohmeyer & Wyman around 1893, the card was sold to show American industry to home viewers.
