Printed in New York by W. F. Powers Co., this lithograph is text only, with no illustration, and it lists four staples alongside their substitutes: corn for wheat, fish and beans for meat, just enough fat, and syrups for sugar. It is the second in a numbered series from the U.S. Food Administration, the agency Herbert Hoover led from 1917 to encourage voluntary food conservation at home. Those savings helped send grain and sugar to Allied armies and to civilians in Europe. The plain, direct layout suggests the poster was meant to be read at a glance.
