Alexis Soyer, the French-born chef who ran the kitchen at London's Reform Club, appears in this frontispiece engraving. Soyer went to the Crimea in 1855 to reform army cookery and designed a portable field stove for the troops. The engraving was made from a photograph by Bingham of Paris and introduced *Soyer's Culinary Campaign*, published in London in 1857, which describes that work. The record spells the name "Sayer," but the book's title and Soyer's reputation point to the chef. The piece also shows how publishers turned photographs into engravings before halftone printing made it easy to reproduce photographs on the printed page.
