Rather than the market's sweeping iron roofs, this view focuses on the smaller utilities that kept the stalls running: the water and gas fittings. The Halles Centrales, Paris's great wholesale food market, was rebuilt in the 1850s and 1860s as a set of open iron and glass pavilions designed by Victor Baltard, and its infrastructure was as up to date as its structure. Such details show how the market managed lighting and water for a trade that ran through the night. The pavilions were demolished in the early 1970s, so images like this one preserve a working detail of a vanished Paris landmark.
