The Union Stock Yards on Chicago's South Side is the subject here, shown from above in a bird's eye view that lays out its pens, alleys, and rail connections in a single sweep. The yards opened in 1865 and grew into one of the largest livestock markets in the world, with cattle, hogs, and sheep funneled in by a dense web of railroads and then processed by the meatpacking houses that clustered nearby. A lithographed view like this one, issued by a Chicago publisher around 1878, was meant to advertise that scale and to show a city proud of its role as the nation's meat center. Look closely at the rows of pens and the track network, which convey how carefully the complex was organized to move livestock quickly from railcar to slaughter.
