Rather than pictures, this lithograph relies entirely on text, listing four staples and their substitutes: use more corn in place of wheat, more fish and beans in place of meat, just enough fat, and syrups in place of sugar. It is numbered No. 2 in the U.S. Food Administration's wartime series, which the federal government set up in 1917 under Herbert Hoover to persuade American households to save scarce food for troops and Allied civilians in Europe. The W. F. Powers Company printed it in New York, and its plain, direct wording suited a campaign aimed at ordinary kitchens. Posters like this asked citizens to make small daily changes, and their blunt lists show how far the war reached into domestic life.
