Prime Lobster" focuses on the American lobster, the large, clawed crustacean that lives along the cold Atlantic coast from Canada down to North Carolina. The word "prime" points to a choice specimen, the kind of catch buyers once sorted by size and quality. In the 1800s, lobsters were so plentiful along New England shores that they were often cheap food, and the fishery grew into a major industry as canneries and live markets developed. Notice the shell's mottled blue-green color, which turns bright red when cooked.
