Hurry" is the opening word of this 1917 color lithograph, a New York State Food Supply Commission poster urging poultry keepers to cull their hens and cut their feed bills. In 1917, grain was in heavy demand because the United States was shipping wheat, corn and other staples to Allied countries and asking households and farms to conserve food. Culling meant selling or slaughtering hens that were no longer laying, which kept scarce feed going to the birds that still produced eggs. The poster shows that the wartime food effort reached backyard flocks as well as large commercial farms.
