Unlike the illustrated wartime posters around it, this one is pure text: a numbered list of four household swaps, corn for wheat, fish and beans for meat, just enough fat, and syrups for sugar. It was issued by the U.S. Food Administration, which Herbert Hoover directed after Congress passed the Food Control Act in August 1917. The poster asked families to change their cooking voluntarily so that staples could be sent to Allied countries and American troops.
