Cardinal Désiré Mercier, the archbishop of Mechelen who became a symbol of Belgian resistance during the German occupation, is the figure this poster places at the center of its appeal to American households. The color lithograph, produced by the Latham Lithographing & Printing Company of Brooklyn and dated around 1917, urges readers to eat less wheat, meat, fats and sugar so more food can reach the war-stricken people of France, Belgium and Italy. It belongs to the year the United States Food Administration, led by Herbert Hoover, was set up to manage food conservation and relief, when voluntary rationing was presented as a patriotic duty for ordinary families.
