Not exclusively so, but I've found several places that have at
least a few good items.

Your best options are at the sandwich shops. Thundercloud is the
best - they have 5 vegetarian options: cheese, avocado, veggie delight, hummous, and gardenburger. Subway and Deleware have at least a cheese sandwich and Schlotzkys has both a cheese and a vegetarian sandwich. I don't recall what Miami Subs has, but I seem to recall a grilled veggie pita or wrap of some sort.

I haven't been to wrapidos, but the other wrap stores (the one in dobie
comes to mind) have plenty of good options.

For pseudo-mexican you've already discovered Taco Cabana. They have
a few options besides just the bean burritos. Taco Bell has the bean burrito and tostada. I'm told the 7-layer burrito uses gelatin in the sour cream and guacamole, but you could still get a 5-layer. :) The veggie fajita wrap is possible if you drop the sauce, which uses chicken stock.

There are many more options, but those are a few that come to mind
right now.
