If you're ever in Madrid, try La Gastroteca de Stephane y Arturo, which is in Plaza Chueca, number 8 (small square anyway), Metro Chueca. The price for a good slap-up meal is around 7000 ptas per head, and the cooking and winelist is brilliant. Their specialities are Skate (done 7 different ways), and black olive sorbet (sounds icky but is out of this world). They also do one of the most expensive Cocido Madrilen~os available (around 5000 ptas I think), but it's also the best. The host, Arturo, is a philosopher of food, he has written 'arty' books on the subject.

Cheers,
Tavis
