I can give some good ones on the Kona Coast. Try the Palm Cafe in Kailua and Sam Choy's in the new Industrial District of Kailua. Venture to Waimea to try Merriman's. They are all excellent restaurants.

On Kauai the restaurant "A Pacific Cafe" (I think that's the right name) is a fine representative of Hawai'i regional cuisine. Nearby on the other side of the road is the worthy, stalwart BullShed which is strictly meat and potatoes. Enjoy!
