In my opinion, whatever you do on Maui will be great. You didn't say where you would be staying, but assuming you can get to Lahaina I would suggest Longhi's (people either love it or hate it, I've found) and definitely try the kaluha pig at Kimo's. I happen to like cheeseburgers so I never pass up a chance to have lunch at Cheeseburger in Paradise. All of these are on the street bordering the ocean (Front St.) in Lahaina.

There is a very expensive restaurant called the Swan Court at the Regency Hyatt in Kaanapali, north of Lahaina. Although I have stayed frequently at the Hyatt, I have never eaten dinner at that restaurant. (It violates my guideline that dressing up for dinner in Maui means putting on socks.) The brunch there, however, is excellent! I have been told that dinner there is very good. (Again, though, it is very expensive.)

If you do get to Kimo's (or anywhere else, for that matter) have a Blue Hawaii for me. I have a modified and, IMHO, improved recipe for them; if you like them and are interested, let me know and I will send you a copy. And, speaking of creative recipes, there is a very famous pastry chef, specializing in chocolate and sugar work, who recently went to Maui to open a store. I have taken classes from him and can assure you that anything he makes is worth trying. His name is Peter Tamourabadi (spelling is uncertain -- he is Greek and I have seen his name spelled several different ways) and just possibly he may be in the phone book. If you do locate him say hello from me; we met while he was teaching at the California Culinary Academy.

Have fun.
