I like Pagliacci's in Denver, although it doesn't quite stand up to the great Italian restaurants in say, Philadelphia.
In Ft. Collins, Pulcinella has some pretty good East Coast style pizza at their pizza parlor (Horsetooth and College) and good Italian food at their restaurant (Drake and Taft Hill). Probably not worth the trip from the Springs, but if you're in town, you might want to check it out.
