I DO know that if you come to Denver you can have VERY tender, non-gamey, lean, delicious farm-raised buffalo steak, roasts, sausage etc. at: The Fort in Morrison The Buckhorn Exchange, downtown Denver The Denver Buffalo Company, downtown Denver and burgers or buffalo cheese steak sandwiches at: The Buffalo Bar in Idaho Springs I'm sure there are other good locations.
