The best dim sum that I have had in the south bay is at Sam Kee in Sunnyvale - corner of Wolfe and Homestead. It is still a little from where you are but it is closer than most.

For Dim Sum, try Ocean Harbor in the Town & Country San Jose at Winchester and Stevens Creek (excellent...better than Hong Sing, which was my favorite before that).

For Thai Food, nothing beats Krung Thai (small place in a Safeway shopping center at San Carlos and Leigh).

Downtown San Jose really isn't that far from you. It may be a cultural wasteland (or not, depending on your preferences), but there are many fine restaurants there, and the light rail stops right in front of your offices. Check out the Vietnamese places in particular (or so I've heard, I've always been happy enough with Golden Chopsticks in Campbell not to search too vigorously for another one in the area).

San Jose Japantown can be a little tricky to find (I live a mile away and I still couldn't describe it to you except to say near the general vacinity of Julian and 4th), but there are many good Japanese places there (as well as a reportedly good Cuban (!) restaurant).

Etc. Look around. There are also many good places in Sunnyvale.
