Few wartime posters put the home kitchen so squarely at the center of national duty as this color lithograph, which is headed "Headquarters food conservation." Its three watchwords, selection, preparation and preservation, lay out the steps a household was asked to take so that less food went to waste. In 1917, as American and Allied armies needed grain, meat and sugar shipped overseas, government and state agencies urged families to observe wheatless and meatless days and to can and dry what they grew. The poster belongs to the Willard and Dorothy Straight Collection, and its color printing reflects how lithography was used to produce large runs of public messages.
