The Union Stock Yards on Chicago's South Side were one of the largest livestock markets in the world, and this bird's-eye view shows the sprawling complex as it looked to the people who built and ran it. Opened in 1865, the yards gathered cattle, hogs and sheep shipped in by rail from across the Plains and Midwest, and the meatpacking firms that grew up beside them made Chicago a national center of the trade. Pictorial maps like this one, drawn from an elevated angle, were popular advertisements of the period, meant to display a city's industry in full detail. Notice how the rail lines and pens are laid out as a single working machine.
