Corn is the subject of this 1918 color lithograph by Lloyd Harrison, titled "Wholesome," which was issued under the United States Food Administration. At a time when wheat was being sent overseas to Allied troops and civilians, the poster presents corn as a practical everyday ingredient for cakes, candies, puddings, salads, shortening and frying. The Canada Food Board's sponsorship reflects the wartime food-conservation push that crossed the border. It is a useful example of how wartime campaigns tried to make substitutions sound appetizing.
