Here the turkey is the whole subject, set up as the centerpiece of the holiday table. Roast turkey became the standard Thanksgiving dish over the course of the 19th century, helped along by magazine illustrations and cookbooks that showed the bird at the head of a family meal. President Abraham Lincoln proclaimed a national day of thanksgiving in 1863, and the feast that grew up around it gradually took the roasted bird as its emblem. The image's focus on the bird alone is a reminder of how much of the holiday's visual identity rests on one dish.
