Dear King, I realize that my suggestion is no closer then Champaign, but there is a pizza joint in Milwaukee that has pizza exactly as you describe, Zaffiro's on Farwell. Zaffiro's is a small, family run, casual pizza place with exceptional pizza that has a dry cracker like crust, I refer to it as matzo like. I have not been there for a year or two, but I would imagine it is the same as always, though I would call before filling up the tank and driving to Milwaukee.
