Ham For seafood in Seattle, Ray's Boathouse on Shilshole Bay is very good. The Herbfarm just outside of Seattle is highly recommended (but I haven't been there yet - I'd like to go). The cuisine emphasizes the Northwest region. It is very expensive and reservations are a must. They book up months in advance but I believe they reserve a portion of the seating to reservations made 1 week in advance. They have been written up in Bon Appetit and Gourmet magazine.
