I visited Seattle several yrs ago, and had the best salmon I had ever eaten at a place called Ivar's Salmon House (on a lake near the university --- there were other Ivar's places but I think they had diff. menus). The salmon was cooked over alder wood and was wonderful. I'm not a native of the area, so I don't know if there are better places, but I was living in SF area at the time, and this was better that what I was getting locally.
