I had dinner at Hilbo's near Greenlake recently. Overall the restaurant was not bad and reasonably priced. Hilbo's serves Cajun food. They have a blackboard listing several dishes that look like a selection from a Prudhomme/Emeril cookbook and a few specials. I started with a smoked salmon cheesecake. It was very dense, slightly chilled in the center and the taste wore thin long before I was near to finishing the dish. I have had savory chessecakes before and they are more enjoyable if lighter. The portion was quite large which turned out to be the rule rather than the exception at Hilbo's. I was torn between the crawfish boats or the blackened steak. I opted for the steak. The steak was large but needed to be more closely trimmed. Rare was a tad too rare (I like red but not purple). It came with a cream sauce and roasted potatoes, a lot of potatoes. The spicing was not extreme, I would have liked it hotter. Desert was billed as a creme brulee. It consisted of a mound of custard with crisp filo strips and cream. Very good and surprisingly light when compared to the meal. Wine is a little on the high side except for the the Copula (sp. Director of the Godfather) white, priced at close to market. The beer, as at any Seattle restaurant, was good and served the meal better. Its a pleasant place with decent food. I would skip appetizers and split two entres which seemed more interesting on the night I visited. They have some dishes for the more adventurous (gator - I do not eat anything that can be described as "taste like chicken", if its true I would order chicken) and I would return for the crawfish boats.
