Creelers seafood restaurant in Hunter Square, Edinburgh is definitely one of the best seafood restaurants I have eaten in. They are also unusual in that they are represented on the WWW at: http://www.demon.co.uk/creelers/ The web site contains links to other scottish sites mainly concerning the seafood industry of the Western Isles, and an (unencrypted) form for mail ordering vacuum packed smoked salmon etc. There is a second restaurant on the Isle of Arran which I did not visit, but if it is as good as the one in Edinburgh, would be worth a visit!
