Our favorite is the red salsa they keep in the refrigerator at Cisco's Bakery. It's not on the menu, so you have to know to ask for it. It's called "the green sauce", which refers to the chunks of pepper in it, not to a tomatillo base. The key word here is fresh.

The restaurant that took over the Seis Salsas location on S. 1st makes some tasty salsas, though now there are but 3. We've been here a couple of times, and generally like it a lot. Migas were wonderful. They do refritos very well.

Evita's on far S. Congress has six wonderfully different salsa. We especially like the marinated vegetables. This is our current fajita joint of choice, with real fajita meat served on a sizzling iron skillet, with plenty of caramelized onions and peppers. And 'lime rice', maybe the best rice we've ever had in a Tex-Mex eatery.
