Gotta watch these Texicans though, they want to use jalapino's and black pepper in *everything*! <BIG Grin> >Although the Green Chili at Chuy's has helped that craving, I still >havn't found a restaurant that has good RED chili. The closest I have found, is in Manchack(sp) ,(think it's called the "Texican Cafe".) and *only* on Thursday nights, they serve (or used to anyway, haven't been there in a while) what they call "Santa Fe" style enchaladas. Layered corn tortillas with a poor substitute for _good_ Longhorn cheese covered in a medium red chili sauce, with onions(only if you ask for them!) spanish rice, and fried beans. Not bad, just get there early, the place fills up fast! If you want to make your own, go to Central Market and grab a few cans of "Hatch" brand enchalada sauce, they have *both* red, and green. Ain't bad for canned stuff. >Any recommendations would be VERY helpful and I will try to report >later on all the suggested restaurants. Please do that. As one who grew up in the Silver City area, I've *really* missed the wonderful chili dishes I took for granted as a kid. <sigh> BTW ... The *BEST* enchiladas I ever got in a restaurant _anywhere_ was at "Maria's Mexican Kitchen" in Santa Fe! <drool, drool, drool> Later... Ray
