In Charleston, convince a local to take you to a shack of a joint called Bowen's Island. As you approach Bowen's Island you will worry that you have been steered wrong. As you enter, you will be certain that you have been misled. Keep going - into the room where they roast the oysters. You'll be seated at a table with a trash can by your side. In the front of the room is an open pit. The Oyster Roaster dumps a burlap bag of marsh oysters (they're all clumped together rather than individual) that he collected that afternoon onto the grill. A few minutes later he'll scoop up a shovel full and walk them over to you and dump them on the table. He keeps bringing oysters until you yell uncle and then brings one or two more shovel fulls just in case you were only being polite. There's no other joint/restaurant like it in the country. Enjoy!
