Sambok Sushi is open once again after being closed for about 3 months due to the owner's wife being ill. It is probably the best place for takeout sushi. Sambok and Kiku at Station Square is probably the only two places in Pittsburgh that serve authentic Japanese sushi which I would trust as being safe to eat.

I don't know what the definition of "authentic" sushi consists of,
but on general quality, I'll give high marks to Sushi Two on Carson Street (between 21st and 22nd, I think). Authentic -- dunno what that means. Safe to eat -- well, I've been there many times and am alive to tell the tale (seriously though, I've never had any problems there).
