Went there last night and was disappointed. I am not much for chain restaurants but Chevy's is one that I find to be consistently good--Cabos suffered greatky by comparison. The margarita I ordered was great - strong in Grand Marnier and smooth--the meal's highlight sadly. The vegetable fajitas were skimpy. The vegetables included onions, peppers and mushrooms. That's it (although they were at least seasoned). If this weren't a chain, I'd think some Pittsburgh plot was afoot because this was essentially the same lame filling that I find in 'veggie' hoagies city-wide. I have to compare Cabos fajitas to Chevys - Chevys includes an assortment of vegetables like carrots, broccoli and squash in addition to onions, peppers and mushrooms. Additionally, the pico de gallo that came with the fajitas was no more than a tiny sprinkling of tomato/cilantro. There was just not enough to complement the vegetables. One more comparison: Chevys includes sour cream, rice, guacamole, lettuce tortillas and pico de gallo with fajitas; Cabos is similar except that there is no guacamole (and it was sorely missed) and the rice was essentially tasteless. My companion's spicy fish tacos had no discernable spiciness. Maybe Cabos is a good place for chips/salsa and margaritas before a movie????
