Having grown up in Missouri, I was raised on pork ribs that had been smoked at low temperature over a hickory fire with water present to control drying out. When the ribs were done, they'd be basted in a catsup/mustard sauce and left to stay warm until ordered. I don't even know where to get ribs like this here in the Triangle. The closest you can come to them is at Applebee's, IMHO. However, the ribslets they serve there are cooked much faster over dry heat, I believe. Personally, I duplicate the ribs of my youth by using a Brinkman smoker with about half a bag of charcoal, a full pan of water and 3-4 racks of ribs. I let them smoke slowly for about 4 hours, tossing in a few hickory chips that I soaked in water overnight. I USED to make my own sauce by starting with Kraft's regular BBQ (their recipe came from Ocey Bruner, who ran a beer joint in my home town in MO and where I have probably eaten a couple of tons of ribs) and add some dry mustard and some molasses. Lately, I merely use KC Masterpiece. Good ribs can also be found at Darryl's, Bennigans and TGI Fridays, IMHO. The classic Eastern Carolina BBQ with shredded pork and vinegar/pepper sauce can be sampled at the BBQ Lodge on Capital Boulevard. When it is properly prepared, using a whole hog, the first few bites have a buttery taste that simply cannot be beat. Enjoy- Since the Triangle has representative BBQ of both styles, we're some really lucky people. Tom

Red, Hot, and Blue at Waverly Place has Memphis-style barbeque. They use Corky's recipe (which was our favorite when we were there...my wife is a Memphis native, I was there 4 years before we moved here). They are to open a second restaurant sometime within the next month, in Raleigh, on Six Forks Road, I believe.
