Try Rosa Mexicana in NYC. Near the Meadowlands, there's an excellent restaurant caleed Park and Orchard. It's not a diner, but the food is exceptional. Menu features alot of vegetarian stuff, although they seem to be moving away from that. Lots of great chicken and seafood dishes. I don't think there's any red meat. Definitely worth the trip. It's right off Route 17 southbound. Take the Union St. exit - right onto Union, right at the next corner and it's on your right. Entrees are huge and range in price from $11.95-$18.95 which includes excellent soup or salad. Save room for desert.
