My only experience eating sushi in Las Vegas was a bad one - the sushi bar at the Flamingo Hilton. We shouldn't have even gone in, given the stench of spoiled fish, but we were hungry, and figured it couldn't be that bad. It was, but we still ended up spending over $80.
The Unofficial Guide to Las Vegas (I don't agree with all of their ratings but it's still a useful reference) lists Sushi House Manda and Hakase as their top two choices.
