Seva is a vegetarian restaurant with a loyal following.  Many AA restaurants have some good vegetarian food.

Seva's, on Liberty Street, is an excellent vegetarian restuarant.

Raja Rani, on Madison, I believe, is an excellent Indian restaurant with a very large vegetarian menu.

I find Zingerman's good but overpriced. They have a long line so apparently quite a few people feel its worth it.

Somewhere near Kerrytown (sp?) is an Ethiopian restaurant, all you can eat for $13.50 and the food is marvelous. With a little forethought you could spend that much on lunch at Zingerman's.
