Drive west 'bout an hour and 15min to Montana's Restaurant just off I-10 at Gulfport. You're probably gonna come this way anyway to hit the casinos. Good cajun seafood and great hickory smoked bar b-q on the buffet and poboy sammiches out of this world.

Mother's is great, but you have to try Casamento's, Uglesich's, and others I can't think of now for erster po-boys. I'd lean to Mother's for a roast beef po-boy, but I haven't tried Parasol's or Domilese's, so I can't really be definitive.
