Several good places come to mind:

The Bristol Bar and Grill on Bardstown Road
 Fifth Quarter on Shelbyville Road
 Austin's on Highway 42
New Orleans East on Shelbyville Road
 Tumbleweed on Mellwood Avenue
Huber's Family Farm Remstaurant in Southern Indiana

That is just to name a few.

With all due respect to Bunny's good advice, she's listed mostly "family-type" places that offer fine value but might not give the Louisville visitor an experience much different from dining out in Peoria or Fort Wayne.

If I might suggest a few spots that I think a Derby City visitor might find more memorable:

EXPENSIVE

  Vincenzo's (downtown)
  De la Torres (Bardstown Road)
  Lilly's (Bardstown Road)
  Porcini (Frankfort Avenue)
  Le Relais (Bowman Field)

BISTROS, ETC.

  Jack Fry's (Bardstown Road)
  Deitrich's (Frankfort Avenue)
  La Paloma (Brownsboro Road)

BUDGET

  Lynn's Paradise Cafe (Frankfort Avenue)
  Mark's Feed Store BBQ (Middletown)
  Vince Staten's BBQ (Prospect)
  Pit Stop BBQ (Highlands)

ETHNIC

  Emperor of China (Holiday Manor)
  Sichuan Garden (Plainview)
  Sesame (Hurstbourne)

There's plenty more. Brewpubs, for example (Bluegrass Brewing in St. Matthews and The Silo near downtown). Louisville is an outstanding restaurant town for a burg its size (just under 1 million metro). Treat yourself to any of the above ... you won't be sorry.
