Of course, while you're in the area you should stop at any of the several wineries that produce Vernaccia which is the wonderful white wine exclusive to the region.
For some very good and plentiful food, I've had some great meals at Trattoria La Torre in Siena. It is just off the main square ( where they hold the palio ). No menus, very little English, great food !

This is written by a local, and contains a number of reccomdations for restraunts. See the FAQ in rec.travel. We also used "The Rough Guide to Tuscany and Umbria", a good guidebook to the region, which has numerous suggestions for restauraunts. It is also (in our limited experience) pretty up to date. I think this is available in the US, though I don't know who publishes it there.
