Gaylord in schaumurg is decent...

Have had pretty good luck at Rainforest Cafe, asking them to make vegetarian versions of their dishes...

On the near North side, there is the Chicago Diner, Amitabul (Korean Buddhist).

You could always go to the Blind Faith Cafe on Dempster in downtown Evanston (two blocks east of the Purple Line, five blocks west of the lake). They're entirely vegetarian, and have been for the many years they've been in business.
