What are TAPAS?

Tapas represents a style of eating and a way of life that are so very Spanish and yet so adaptable to America. Tapas are a varied as the cooks who create them and in Spain range from the simplest fare, like grilled chorizo (sausage), flavorful jamon serrano (curred ham) tangy Manchego cheese, and simple canapes (almost anything atop a piece of bread becomes an instant canape in Spain) to surprisingly sophisticated dishes using quail, frogs' legs, fresh snails, caviar, and angulas (baby eels). They can be more foods than traditional appetizers, but more often than not cross the line into what we might thinks of as first course or main course dishes.

Small portions, lots of them and immediate gratification..

Enjoy!

My vote for best all around TAPAS dish is PATATAS ALIOLI or Potatoes in Garlic Mayonnaise. You'll love it!!

BestTAPAS establishment in the US or at least
the midwest is Cafe Ba-Ba-ReeBa! Chicago, Illinois on the North Side and my favorite place to each of all time!

Try Emilio's in Hillside or his new restaurant in the city. The food continues to improve and the atmosphere is much nicer.

Emilio Gervilla, the owner, was the original chef at Cafe Ba-Ba-Ree-Ba!
