The area around the The Royal George ( ~1650 N Halsted & across the street from the Steppenwolf Theatre) is well-served with restaurants. Most of them are good to very-good. I don't know how late you want to snack, but on theatre nights, I expect most of them are open for some sort of after-theatre dining. Many of these restaurants are closed on Mondays when the theaters are usually dark.

Many of the restaurants are full-service operations, but depending on what you've got in mind for a snack, the most obvious choice is Pizza Capri (Willow & Halsted). Pizza Capri has neither ambiance nor liquor, but does serve small gourmet pizzas, sandwiches, etc. and is open every day until at least midnight. L'Olive, just to the south of the Royal George advertises late-night dining.

Some of other places likely to serve lighter fare (w/ more ambiance and liquor) are Blue Mesa (southwestern) and the newly opened Black Duck (Willow & Halsted), which I believe serves hamburgers as well as full meals. You can walk this region of Halsted and check out the offerings to see what appeals.

A little further up Halsted ( ~1900 N ) is Tilli's, which is pleasant, but don't know about late hours. You're not all that far from the Goose Island Brewery (clybourn & Willow), either. There's Parking there, but if you walk the 4-5 blocks along Willow from Halsted to Goose Island late at night, pay attention to your surroundings. This area no longer seems very dangerous to me, but I'm often surprised to read of muggings along this stretch.

L'Olive - my favorite Moroccan food in Chicago. They are open late.
